Banana Pudding

this is why i stay so slim (right!)...this recipe is from Paula Dean..she is a wonderfully fun cook on Food network tv...i saw her make this a few years ago and have brought this to potlucks and it is a big success!!

Not Yo Moma's Banana Pudding
2 bags Pepperidge Farm Chessmen cookies
6 to 8 bananas, sliced
2 cups milk
1 (5-ounce) box instant French vanilla pudding
1 (8-ounce) package cream cheese, softened
1 (14-ounce) can sweetened condensed milk
1 (12-ounce) container frozen whipped topping thawed, or equal amount sweetened whipped cream

Line the bottom of a 13 by 9 by 2-inch dish with 1 bag of cookies and layer bananas on top.
In a bowl, combine the milk and pudding mix and blend well using a handheld electric mixer. Using another bowl, combine the cream cheese and condensed milk together and mix until smooth. Fold the whipped topping into the cream cheese mixture. Add the cream cheese mixture to the pudding mixture and stir until well blended. Pour the mixture over the cookies and bananas and cover with the remaining cookies. Refrigerate until ready to serve.

A Jessica Challenge

I completed another Jessica challenge....i can't wait until Monday when her third class begins...we all were hovering over our keyboards to register for this class...she books up so fast....but i am in and now i need to go and take some pictures so i will have something to work with....i will...tomorrow....lol...

well...i did it...posted in the gallery at WeedsandWildFlowersdesigns.com...worked on this all afternoon because of the extraction...but their products are gorgeous!! i think i mentioned that in the last post.....so here it is:

Birthdays

i love birthdays....all kinds of birthdays....and when digi designers have birthdays..prepare yourselves for a good time.....you saw the party fun i had with oscraps...well...this weekend it is the first birthday of weedsandwildflowersdesigns....their products are gorgeous!!! and yes i just had to have a few....they are having a sale and fun times....check it out....Also, signing up this weekend for my third class with Jessica Sprague....she is just amazing!! She has opened my eyes to this digi world but also i notice i look at my surroundings differently...as if i am going to take a picture...LOL....so..i am off to have some fun....see ya all later with maybe a new layout made from my new "stuff"........

Zucchini Bread

It is wet and cold out there today...the winds are supposed to come in harder ... so won't this be interesting getting the dogs to the groomers today....But until then i think i will bake some quick bread...one of our favorites here is zucchini bread....so here goes:

Zucchini Bread
2 cups flour
1 tsp.cinnamon
1/2 tsp. baking powder
1 tsp baking soda
1 tsp salt
2 cups sugar
1 1/2 cups grated, raw zucchini
1/2 cup grated carrot (gives bread a nice color)
1 cup vegetable oil
3 eggs
2 tsp. vanilla
1/2 cup chopped nuts
1/2 cup chopped dates or raisins
Sift dry ingredients. Beat together eggs; add oil, sugar, vanilla and grated vegetables. Add dry ingredients to egg mixture. Add nuts and raisins. Pour into 2 greased and floured 8x4 inch loaf pans. Bake about 1 hour at 325 degrees.....sometimes a little longer...check the centers with knife and if it comes out clean it is done....ENJOY!

It's Raining

This weather is just "nuts"....raining with some snow earlier....slippery! and of course i had to take the dogs to the groomers....as soon as they see me with the leashes they go and hide...maybe it is because i only take them to the groomers and vets...maybe i should take them somewhere fun to throw them off...but the winter has not been good for that...so, i get them into the car (after slipping and sliding down the steps) and off to the groomers only to hear it is tomorrow not today.....oh, well...i'm retired...so this does not throw me....back home to the dogs delight....they are now both asleep at my feet...life is good!! So i did another layout....

The Visit

you know which one i am talking about....the dreaded annual physical...went, it's done, thank you!!....i love my doctor, i do...and , i know this will come as a shock to all of you...but i have to loose weight....WW here i come...fish and salad for dinner tonight....salad and chicken for lunch...but i need to do this to bring down the blood pressure (can't blame it on work anymore..) So i made this public...also...i have to get some exercise....i am alergic to exercise...but i guess i will start to walk....won't join a gym (done that), curves (done that), swim (you will never see me in a bathing suit)...so i guess i will start walking (oh, my arthritis)...i think i said this all in january.......ok, ok....

CARROTS

you read that right...carrots....who would of thunk....carrots are to be eaten raw or maybe roasted with a pot roast but this is truely delicious!! A nice side dish....something different!
Marinated Carrots
5 cups sliced carrots, cooked 20 minutes
1 medium onion, sliced
1 small green pepper, chopped fine
1/2 cup salad oil
1 can tomato soup
3/4 cup vinegar
1 cup sugar
1 tsp.dry mustard
1 tsp. Worcestershire sauce
Combine all ingredients and marinate at least 24 hours in a covered bowl.....
This is if you wish to eat cold...me, i like them warm so i cook them right in the marinade and i use big bag of baby carrots....firm believer in playing around with a recipe.....put them in a crock pot to cook if you wish.....ENJOY!

Big Birthday Month

Yesterday was my dh's birthday...59 years old...i first met him when he was 16 years old...we go wayyyyyyyyyyy back...can't even lie about our past..LOL! and my oldest daughter will be 35 tomorrow...i can't believe that one...i am sitting here wondering "when did this all happen?" I remember when i was young and the older generation would say "time goes so fast you need to take time to enjoy"..."yea,right", i would say,"what do they know"....well, HELLO...here i am saying the same things...scarry! More Digi Fun

I am so amazed at how much joy i get from this digital scrapping world...now, i know i have talked about this before but i never thought this would be this much of an interest and now i spend my mornings talking with woman from all over the world (scrapguy,too...you know i luv ya); read their wonderful stories on their blogs; download freebies; read newsletters from digi shops(and of course purchase that which i just have to have); make layouts from different challenges; and of course let's not forget this blog...this too is fun!....My digi friend Liv was selected to be in the Little Dreamer Design apprentice program...She is the most talented, wonderfully warm individual...she also is so generous with her creations...you should check out her blog and LittleDreamerDesigns....i did a layout with part of her kit "adventure":

I would like to bring attention to this most wonderful Blog i found while i was hopping around...it is all in french but between my years of french in high school and college and the most beautiful layouts i could understand about 90 percent of it....i spend a good amount of time reading this (also, she is so generous with her templates) and delighted in the joys of her children....this is an example of what i am saying...i do not know this family but i feel close thru her blog and am learning about the world of people outside my own!! Rain not Snow

Quick Treats

It is still snowing....has been all day and all night....do you think we will ever see Spring...i thought i saw my daffodils and crocus peeking up the other day....going to my oldest daughter's tonight for dinner...my youngest is up from New York City...isn't it nice when you can "Pass" these events to the next generation...they are both excellent cooks and i can sit and enjoy!! but i still feel the need to do something (what can i say) so i am bringing these tonight...quick and easy..always keep the ingredients in the house just in case the need should arise...this recipe is on the back of Stella D'oro Anginetti cookies:
Anginetti Cream Puffs
1 pkg (5oz)STELLA D'ORO ANGINETTI Cookies
1.5 cups thawed COOL WHIP Whipped Topping
1 pkg(3oz) PHILIDELPHIA Cream Cheese, softened
1 can (8oz)crushed pineapple, drained
Cut cookies in half horizontally; set aside ... i use them whole
BEAT whipped topping and cream cheese in small bowl with electric mixer at medium speed 1 minute or until blended. Gently stir in pineapple. SPOON 1 Tbsp. pineapple mixture onto bottom half of each cookie; cover with top half of cookie. (you will see below how mine look)Refrigerate until ready to serve.......i also put a little pineapple on each top...bet some toasted coconut would be good too...
