Baked Potato Casserole

Right now i could eat this whole thing....eating healthy is good but CHANGE for me is not easy...i know...it is so worth it...ok..but it doesn't hurt to share this with you...great to have when the crowd is coming...it is easy to make and is sooooooooo good!!

Baked Potato Casserole

1 32 oz Frozen Hash Browns (thawed)

1/2 pkg frozen chopped onions (thawed)

1 pint of sour cream

1/2 pound grated cheddar cheese

1/4 pound Parmesan cheese

2 cans cream of potato soup undiluted

Grease a 3 qt casserole dish / blend all ingredients / Bake at 325degrees for 40 minutes..

(i have also done this in a crock pot)



I did another LO today...this one was a challenge from Jessica's mb / originated from challenge at oscraps...kind of pleased with myself...went "outside the box"...new techniques..never had extracted a picture from photo before....

Looks like another great recipe Dawn. I hear you about eating healthy but its so hard when there are soooooo many good things to tempt you. Yes, your LO was amazing and coming out of the box sure worked for you.

I've got a similar recipe but this one sounds like it has a few great changes ... will have to try it!! Great job on your LO - your extraction is fantastic!! Thas is something I still have to try sometime :)
