Baby Pictures are so great to scrap!
I did this in Photoshop Elements 5. I have upgraded to 7 but still exploring this before i do anything in it...not much differences have i found yet..a few i will probably like once i get use to them...change is difficult for me..wanted to buy the CS4 but the price is choking me so until i decide to design my own paper and elements i will stay to the less expensive but still great elements!!

Pumpkin Mincemeat Bread
Pumpkin Mincemeat Bread
Bake at 350 degrees
4 1pound coffe cans 50--60 minutes
3 med loaf pans 55-65 minutes
2 large loaf pans 60-70 minutes
8 soup cans (1/2 - 2/3 filled) 20-25 minutes
3.5 cups sifted flour
1.5 cups sugar
2 Tablespoons pumpkin piespice =1Tcinnamon; 1.5t allspice; 1/2 t gr.cloves
2 Tablespoons baking soda
1.5 tsp.salt
1.5 cups brown sugar
4 eggs
2.5 cups water
1 cup oil
2 cups canned pumpkin
9 onzes box dry mincemeat(crumbled)
1 cup chopped walnuts
Sift together flour, white sugar, spice, soda,salt. Mix in brown sugar. Make a well in center. Add eggs, water, oil and pumpkin. Beat at low speed until blended, then beat for 3 minutes. Stir in mincemeat and nuts. Pour into greased, flour pans and bake....cool...when i use the coffee cans i put the cover on once cool and freeze right in can...this smells soooooooooo delicious while cooking and is sooooooo moist and yummy!!

Beef Roast with Dried Fruit
Beef Roast with Dried Fruit
Cooking time: 6-8 hours
Prep time: 15 minutes
Pot size: 3-6 quarts
Serves 8
2 medium sized yellow onions
1 clove garlic
3-4 pound boneless pot roast
1.5 cups mixed dried fruit
1.5 cups dried apple rings
3/4 cup pale ale
1 cup water
1/4 cup packed brown sugar
1 bay leaf
1/4 teaspoon ground cinnamon
2.5 teaspoons salt
1/4 teaspoon ground black pepper
1. Peel and slice the onions about 1/4 inch thick. Peel and mince the garlic.
2. Place the onions in bottom of the slow cooker. Place the roast on top. Cover with the mixed dried fruit. Mix together the beer, water, garlic, brown sugar, bay leaf, cinnamon, salt, and pepper; pour over the roast. Cover and cook on low setting 6-8 hours.
3. Remove the bay leaf and top with the apple rings before serving!

Travel Challenge
Today i spent a good amount of time on Jessica's Challenge...I went back to 1987 with the family's trip to Israel...this was fun and brought back so many wonderful memories!! I do want to say i did do a little housekeeping today (i hate it so much!!) My dh helped me clean out kitchen cabinets...you all know the one with all the plastic containers...yes, you do!! Half that plastic went in the trash!! and dated can goods (you all have them!) went in the trash too...gone are the days i cook for 4...has taken me almost 10 years to realize it so i don't need to have all these can goods...also, i was raised by parents who survived the depression...you know what that means...we had enough food in the cellar to feed the whole state of Vermont!! and then experiencing that winter storm-the big one in this Boston area...i started filling bookcases in the cellar with food i bought at Costco...scary!! I am changing my ways......

YEAAAAAAAAAAAA!! She asked us to pass the word...need to check this out...one week of videos from Jessica and it's FREE...what do you have to loose...you don't need to use photoshop to complete the project...it is for everyone who wants to tell their stories...Great opportunity to check her out if you have not had the pleasure of taking any of her classes!! I am in and feeling great...i was disappointed when i heard she was cancelling Digi in Deeper But Now..I am In!!

Comfort Food
Tuna Noodle Casserole
7 oz.can water packed tuna fish, drained
1 can cream of celery soup
1/2 cup milk
1/2 cup mayonnaise
2 medium stalks of celery, chopped
3 tbsp. coarsely chopped pimento
3 slices American cheese, cut into small pieces
4-5 shakes onion powder
4-5 shakes garlic powder
6 oz. medium noodles, cooked
Potato chips for topping
Butter
Combine tuna, celery soup, milk, mayonnaise, celery, pimento, American cheese and seasonings in a saucepan. Cook over low heat until cheese melts. Mix with noodles and pour into a greased 2 quart casserole. Top with crumbled potato chips an dot with butter. Bake in a 350 degree oven for 30 minutes. This freezes well before baking and before adding potato chips and butter....

I am at the end of this 2 week bronchitis illness....it just knocked me over...hope this is it for the winter months!! Hoping to go and take some great fall photos this weekend......love this time of year!
