Steel Cut Oatmeal

WOW...this stuff is amazing....sticks to your ribs and keeps you warm!! My digi friend, Angela, posted this recipe on her blog and I just had to try it..Made this Thursday night...all night..and the aroma just permeated the house...nothing like the smell of cinnamon and vanilla...yummmm. This morning I took some of the leftovers (for there will be some), added milk, raisins, almonds, splenda and heated in the microwave for 1.5 minutes and it was just as good (if not better) as the first day!!! So, i am going to post this and hope you all enjoy!! (don't think Angela would mind...she needs the warmth from this for she lives where it has been 36 degrees below zero)

Steel Cut Oatmeal
2 cups steel cut oatmeal( i found this right with the hot cereals in my local grocery store)
4 cups skim milk (or water...but the milk is sooooo good)
1/2 teaspoon of salt
2 Tablespoons of butter (optional, but why skip this goodness)
flavoring....i added 1 teaspoon of vanilla and 1/2 teaspoon cinnamon

Before you go to bed at night, put all ingredients into your crockpot (Angela recommended using one of those baggy liners for the crockpot to help with cleaning...i didn't and the cleanup wasn't too bad once you soak it for awhile) Cook on low for 6-8 hours...DO NOT try to substitute with quaker oatmeal....really!! This makes 6 servings and as i mentioned above, the leftovers are GREAT!!

Additions to this once it is cooked - use your imagination - raisins, dried fruit, fresh fruit, nuts, milk or yogurt, etc...my dh put good ol Vermont Maple Syrup.....mmmmmmm
