Dame Edna
Last evening dh and I went to see Dame Edna at the Colonial Theatre in Boston....prior we enjoyed dinner at Jasper White's Summer Shack. Well...we had front row seats and I had the feeling that we would be in trouble..and sure enough "she" picked on me first....what a funny,funny "lady"...I have not laughed like that in a long time...but,wait...I am called onto the stage with three others and we are all sitting on a couch being interviewed...next thing i know i am standing in this grand hall in front of hundreds of people SINGING "Somewhere over the Rainbow"... I was dying!!!! Here I am with the Great Dame......

Mexican Casserole
What can i say...life took over for awhile and the blog took a back seat!! I even signed up for an online class at Jessica's and i have not yet started it...good thing these classes are available for ever once purchased...we ate pasta and bread last night....if i had to eat one more piece of Matzos.....dh went back to work today so i think i will return to my digi stuff.....here is a great recipe:
Mexican Casserole
1.5 pounds of ground beef
1 pkg.(1.25oz) taco seasoning mix
1 can(11oz)whole kernel corn, drained
1 can (10oz) tomatoes and green chilies
1 medium green or red pepper, chopped
2 cans (2.8 oz each)Durkee French Fried Onions
1 pkg(8.5oz) corn muffin mix
.5 cup shredded Cheddar cheese
In skillet over medium-high heat, cook beef until browned, Pour off fat.
Stir in taco seasonings, corn, tomatoes and green chilies, pepper and 1 can of the onions. Pour into greased 2 qt shallow baking dish
Prepare corn muffin mix according to pkg.directions. Spoon batter around edge of beef mixture. Bake at 400 degreesF for 20 minutes or until corn muffin topping is done. Top with cheese and remaining can of onions. Bake 1 min or until onions are golden
