Sweet Potatoes and Broccoli Salad

yes...you heard right....this is one of my dh favorite salads...this too came from the Moosewood Cookbook by Mollie Katzen.....the flavors are so amazing and surprising in the marinade!!

Marinated Sweet Potatoes and Broccoli
3 medium-sized sweet potatoes or yams (about 2 lbs)

Marinade:
1/2 cup walnut oil (or olive oil)
1 large clove garlic, minced
3 Tablspoons of lemon juice
2 Tablespoons raspberry vinegar (can use red wine vinegar but the raspberry is so good)
1 to 1.5 teaspoons salt
1 Tablespoon of dry mustard
1 Tablespoon of honey
freshly ground black pepper

1 large bunch broccoli (1.5 lbs, cut into small spears)

optional garnishes (oh so good): thin slices of green apple, chopped toasted pecans

1. Peel the sweet potoatoes, cut them in halves or quarters, then into thin slices. Put them up to cook, either in or over boiling water....Meanwhile, prepare the marinade.

2. Combine the marinade ingredients in a medium -large bowl. As soon as the sweet potato slices are tender, add them, still hot, to the marinade. Mix gently

3. Steam the broccoli until bright green and just tender. Rinse under cold running water and drain acompletely. Lay the broccoli spears carfully on top the salad. Cover tightly and marinate for several hours.

4. Within 15 minutes of serving, mix in the broccoli from on top. Serve garnished with thin slices of green apple and chopped,toasted pecans.

My Maternal Grandparents

This weeks challenge at Jessica's....use a black and white photo....just what i needed to continue with my heritage album (think it will take me years...but this is fun)....Will do a second page with the history i know about them....(now that i have collected this information from my mother and aunt)...i really stress that you all should start collecting your history even if you don't scrap...important to hand down to the next generation......well, need to keep this short...we are under a severe thunderstorm watch so i think i will turn the computer off.....

Indonesian Rice Salad

This is a big pleaser!! I love this recipe and i love the cookbook i found it in many many years ago!! The cook book is MOOSEWOOD COOKBOOK by Mollie Katzen.....best vegetarian cookbook i own!! now...do not panic when you see the list of ingredients....trust me...easy , delicious and healthy!! I like to take this for summer pot luck and cookouts....you can bet it will be the only one of its kind on the table......

Sri Wasano's Infamous Indonesian Rice Salad
yield: 4-6 servings

1. Place in a saucepan. Bring to a boil, lower heat, cover, and simmer until tender (35-45 minutes).........2 cups brown rice and 3 cups water

2. While the rice cooks, combine in a large bowl:
1/3 cup peanut oil
3 Tablespoons Chinese sesame oil
1/2 cup orange juice
1-2 medium cloves garlic, minced
1 teaspoon salt
2 Tablesppons soy sauce
1/2 teaspoon crushed red pepper
2 Tablessons rice or cider vinegar
1 cup chopped fresh pineapple (can use crushed pineapple)

3. Add the hot rice directly to the bowlful of dressing. Mix well. When it has cooled to room temp., cover tightly and refrig until cold. Shortly before serving, stir in:
3 scallions, finely minced (whites and greens)
1 stalk celery, finely minced
1 medium sized red or green bell pepper, thinly sliced
1 8-oz can water chesnuts, drained and thinly sliced
1/2 lb. fresh mung bean sprouts
1/2 cup (packed) raisins or currants
1 cup coarsely chopped peanuts and/or cashews, lightly toasted
2 Tablespoons sesame seeds
optional: fresh snow peas, for garnish

I am back...

What a great time we had at the Scrapbooking Convention....we played and ate and ate and played!! (firm believer in both of those activities)...I was covered in ink and glue and it felt good! and of course, i spent some money in the vendor's area...oh, yes!! wasn't going to for i am "digi" now but...i can justify each purchase, yes i can...Had to have the Bind-it-All with all the goodies that come with it...and then there were a few (maybe more than a few) stamps...for all those cards i am going to do...and of course there were the projects that i had to have at least three of for they will be for gifts....LOL.....the crops were FUN and all the goodies and prizes...so it took two trips to the car when i left the hotel......came back on Sunday and watched my Josie yesterday so it wasn't until today that i could tackle the Jessica's challenge ... so here it is...did a two pager.... credits: Template by MoonDesigns; Papers by Elisa'sBits_CasualBlend and CozyZone Kits; swirl by AASPN; font-coventry gardens

CK Convention

I am going to a Creative Keepsake Convention tomorrow for the weekend....looking foward to this!!...going with my oldest daughter and we will be taking classes and going to crops!! ordering room service, etc...YES! I have not paper scrapped since last year's convention now that i have discovered the "dark side"..digital scrapping...that is where i will stay but i think getting my hands dirty with some glue is what i need right now!! of course i will be shopping...i have a few things in mind.....had to finish a Jessica Sprague's ColorLift Challenge before i left ... so here it is:

Nature's Beauty

two postings in one day.....but i had to show-off my latest...this is from tutorial from JessicaSprague's Photoshop Friday-Easy 3-panel Storyboard (May1,2008)...so i went out under the apple tree today and took the shots....my allergies , of course, kicked in and the sneezing was interesting...lol...but it was so worth it!! This can stand as is or placed on digi paper..can frame!

Mushrooms

I love them!!....This recipe is great!! I use to make them and put them in pretty jars and give as gifts over the holidays or when invited to someones home for dinner....I have not made them in years and when i came across the recipe i knew i had to make them up today!!

Marinated Mushrooms
Fresh Mushrooms that are clean, cut and simmer in water no more than 4 minutes. I use one pound (can use 3 6oz cans but FRESH is much better) but when i make this i would double recipe for they are sooooooo good!!

2/3 cups vinegar
1/2 cup oil
3 cloves garlic
1 Tablesppon sugar
1.5 teaspoons salt
1/4 teaspoon black pepper
2 Tablespoon hot water
4-7 shakes Tabasco sauce
1 teaspoon oregano
1 jar pimentos
2 med onions, sliced thin
Mix all the above and refrigerate ... it doesn't take long in this marinate for the flavors to set in...can make in the morning and eat by evening (if you can wait that long...lol)
